  • ½ cup cooked diced apple
  • ½ teaspoon cinnamon
  • cinnamon sugar (1 tablespoon caster sugar mixed with 1 teaspoon cinnamon), for sprinkling

  1. Preheat oven to 185ºC/165ºC fan-forced. Line a 12-hole muffin tin with paper cases.
  2. Sift the flours and bicarbonate of soda into  a bowl. Add the xanthan gum and combine.

  4. Add 3 tablespoons of the flour mixture to the egg mixture and fold in with a metal spoon. Gradually add the remaining flour mixture in small batches until all combined. (Ensure the mixture is smooth and no lumps remain.)

Place in the oven for about 15–20minutes. Check the cake are ready by lightly pressing on the top of a cake. If it springs back they are cooked.(Alternatively, insert a skewer into the middle of a cake. If it comes out clean, they are cooked.)
  6. Remove from the oven and allow to stand in the tins for 2minutes. Remove the cakes and place on a wire rack, then serve warm
